According to the explanation of Dr. Bui Dac Sang (Academy of Science and Technology, Hanoi Traditional Medicine Association), the combination of chicken meat and lemon leaves not only enhances the flavor of the dish but also has preventive effects.

In traditional medicine, chicken meat is a medicinal ingredient called “ke nhuc”. Chicken meat has warm properties, sweet taste, while lemon leaves have a spicy-sweet taste, warm properties, and have the effect of resolving phlegm, expelling phlegm, treating coughs, and antibacterial. When combined, they complement each other.

“Chicken skin can cause allergies, it contains many bacteria, and some people can even get poisoned when eating chicken that is not guaranteed. Sprinkling lemon leaves on the chicken meat not only creates a fragrant smell, reduces the greasiness of the chicken skin, but also has high antibacterial properties, detoxifies the chicken skin and avoids allergies,” said Dr. Bui Dac Sang.

Eating chicken meat with lemon leaves will enhance the flavor of the dish and reduce the symptoms of poisoning.

In addition, in traditional medicine, there is a very effective remedy for those who get poisoned or allergic when eating chicken meat or skin, which is to drink lemon leaf extract, which can reduce symptoms.

“Through this, we can see that lemon leaves combined with chicken meat is a medicine, not just creating aroma and flavor. However, it should only be sprinkled sparingly because using too many lemon leaves will make the dish taste bitter,” Dr. Sang added.

How to boil delicious chicken

Step 1: Prepare the ingredients

– After buying free-range chicken, wash it thoroughly. You can use salt, vinegar to rub on the chicken skin to remove the gamey smell.

– Peel and thinly slice the ginger. Peel and crush the shallots.

Step 2: Marinate the chicken

– Place the chicken in a large pot and add a few slices of ginger, salt, cooking wine, crushed shallots and lemon peel.

– Use your hands to gently rub the chicken and the ingredients to infuse the flavors into the chicken skin. This step will make the chicken meat more flavorful and aromatic.

– Marinate the chicken for about 1 hour.

Step 3: Boil the chicken

– Bring clean water to a boil.

– When the water is boiling, add the marinated chicken to the pot.

– When the pot comes to a boil again, remove the chicken and immediately place it in a bowl of cold water for about 5 seconds, then put it back into the pot and soak for about 10 seconds, then take it out. Repeat this process 3 times to make the chicken skin crispy.

– After that, put the chicken back into the boiling pot. When the pot comes to a boil, reduce the heat, simmer for about 5 minutes, then turn off the heat. Soak the chicken for about 30 minutes to cook (adjust the cooking time according to the weight of the chicken).

* Handy tip:

During the boiling process, you should not cover the pot. Opening the lid while boiling will help remove the gamey smell of the chicken and prevent it from lingering in the meat.

Also, remember to skim off the foam as soon as the pot comes to a boil to avoid unpleasant odors in the meat.

Step 4: Complete

Remove the chicken and place it in a bowl of ice water for about 1 minute. The cold water will help firm the chicken skin, keep the chicken meat tender, juicy, and prevent it from drying out. When the chicken has completely cooled, cut it into bite-sized pieces.
